what I ate

Hello everyone!! I hope you are all enjoying your long weekend. Here in az it has been super grey and *cold* which I have been LOVING. Today I am sharing everything I ate on a Sunday. This is one of my days I usually have off and spend at home. Everything I make is super simple and quick but really delicious and usually on the healthy side. When I tell people that I’m vegan, I get a lot of questions about my diet and what I eat so I hope you all find this interesting and get some healthy inspiration 😚.


breakfast // mango + mixed berries + oj + 1/2 scoop Vega protein & greens blended together with banana + granola + peaches on top

snack // bagel with vegan cream cheese (not healthy) + agave. really good with toasted almonds but I was all out πŸ™

can we all take a moment to notice exactly how old this magazine is?

snack // I wasn’t super hungry around lunchtime because I had a late breakfast and I like having lots of snacks throughout the day.

these sprouted barley crackers are my fav and what I ate with the salsa, so yummy and the ingredients are πŸ‘Œ.

cooking dinner // TIP: the longer you cook the greens, the more nutrients they lose! we want to get all the nutrients we can so try not to keep them on the heat for longer than you have to.

dinner // one of my new favorites! roasted sweet potato (375Β° F for 1 hr) with sautΓ©ed mushrooms + spinach (or any mixed greens, I used wellness blend), beans + vegan cream cheese (or sour cream). after this picture, I put more toppings on and actually ate 2 of these. this is a recipe that even non-vegans would love, it is so yummy!
